Oil-Free 4 Ingredient Pancakes

Alright. I did it. I finally did it.
I made a blog.
I have been itching to create a blog site to write about and document my food (and life), as well as efficiently share my recipes with you all! So to kick off this lil shindig, and considering it is Sunday, I figured I should give you my go-to oil-free pancake recipe!!

So I'm new to this, and don't have a full set of pictures documenting the process of making these pancakes. Hopefully the pictures I have will give you some toppings motivation though!

A while back, upon going vegan, I realized that I was missing pancakes from my life. However, every single recipe I found for some vegan pancakes either had too many ingredients, had oil, or called for three different types of flour (that I hadn't even heard of before!). Therefore, I set out to create a simple recipe, and fast, because I really just wanted some gosh darn flapjacks.

I bounced around a few ingredients in my mind, using the old (gross!!) pre-vegan pancakes I used to eat as a reference, finally coming up with this recipe. And I can be pretty lazy when it comes to things like cooking, so don't stress-- these babies are so easy, you'll be making them every Sunday morning. Heck, make them every morning!
These totally simple, totally easy, and totally healthy pancakes can seriously be made with only 3 ingredients... but I up it to 4-5 just for the benefit of my taste buds. No shame in however you like your pancakes though!
Andddddd here they are...

OIL-FREE VEGAN PANCAKES
Yields about 7 pancakes.
INGREDIENTS:
1 cup flour of choice (I use all-purpose, but whole wheat or others may be used, some with slight measurement adjustment)
1 tbsp baking powder
1/2 tsp salt
1 cup plant-milk of choice (can be substituted for water... I often do half water half milk)
1-2 tbsp sweetener of choice (may be left out if unwanted OR if plant milk is a sweetened version)(Or get double the sweetness! Again, no shame!!)
INSTRUCTIONS:
Mix together dry ingredients (flour, baking powder, salt, sweetener (if using solid sweetener)).
Mix in liquids (milk/water and sweetener (if liquid)).
Let sit for 5-10 minutes (optional).
Spray pan with nonstick spray if needed (I use coconut oil) and turn burner on to low heat to warm the pan.
Increase heat to low-medium. Pour batter onto pan at desired amount, using a spoon to spread out batter for size and thickness.
Let cook until bubbles form on surface. Flip, and let cook for a bit of time. Remove from heat, repeat, and top you pancakes with whatever your heart desires.
